Gabe’s ginger-coconut granola

Adapted from Nik Sharma’s recipe in Season

Combine in a large mixing bowl:

2 cups old-fashioned oats
½ cup almonds, chopped or sliced or whole
½ cup cashews, chopped or whole
½ cup unsweetened coconut flakes
2 tbsp sunflower seeds and/or pumpkin seeds
The above ratios can be adjusted – sometimes I like more seeds, less nuts.
1 tbsp poppy seeds (optional – I often leave these out)
1 tbsp (or more!) ground ginger
½ tsp kosher or sea salt

Whisk together in a small mixing bowl:

1 tbsp apple cider vinegar
½ cup maple syrup
¼ cup extra-virgin olive oil
(this ratio can be adjusted – I do half and half these days)

Pour most of that mixture over the dry ingredients and mix well.
Spread on a baking sheet (parchment paper makes all of this easier) and let sit for 20 minutes. If you use quick oats you can probably skip this step.

Combine with the remaining liquid and let sit:
½ cup raisins
4-6 chopped figs or apricots. Lately I like Turkish apricots.

Pre-heat oven to 300 degrees. Use convection mode if you have it.
Bake for about 22-23 minutes.

Transfer the oats mixture back into the large bowl, stir in dried fruit, and then return to baking sheet.
Bake for another 7-8 minutes.

Store in airtight container.
I usually double this recipe and use two baking sheets.

For a low-carb version, just drink the olive oil.

I spent 5 hours yesterday shopping for the ingredients and then making this.

I tried it this morning but cannot recommend it| :???:

It makes my slide so sticky it is difficult to move it quickly and when it does move it is very scratchy. :weep:

Mr. Rice, I normally have great respect for your words of wisdom. Am I doing something wrong or should I go back to Yamasnot? :idk:

Ingredients:

1/2 cup Fruity Pebbles cereal
Milk, to taste

Steps:

1. Pour Fruity Pebbles carefully into a bowl
2. Pour milk or vegan milk substitute over cereal, to taste.
3. Enjoy

When I was younger, I used this recipe many times. However, the recipe called for 2 to 3 cups of Fruity Pebbles and insisted on using whole milk. I have also seen a variation of this recipe that suggested adding a 2 or 3 tablespoons of heavy whipping cream to the milk.

After my heart surgery, this is one of the recipe index cards that my cardiologist removed from my recipe box.
